For everyone that enjoyed the Chili at our last camping trip. He has be gracious enough to share his recipe:
INGREDIENTS:
1 package of Carroll Shelby’s Texas Chili
6 – 10 large sweet onions (4-6 pounds) chopped
6 pounds ground beef
2-3 pounds Kielbasa sausage (thin sliced)
1 cup Veg or Canola oil
2 cans Red Beans
2 cans Chili Beans
1 large can RoTel seasoned tomatoes
2 large cans diced tomatoes
2 small cans Tomato paste
Smoked Paprika & Chili Powder to taste
2 cans whole kernel corn
EXTRAS:
3 pound package shred Mexican cheese
Crushed red pepper to taste
small can Jalapeno peppers chopped
Sour cream
2 large green bell peppers (if desired) finely chopped
Cumin (if desired)
DIRECTIONS:
1. Heat large dutch oven or thick pot over medium heat, heat enough oil to caramelize onions.
2. Add chopped onions – stir frequently to caramelize – when done, remove onions to a large bowl
3. Brown hamburger, stirring frequently so it doesn’t clump – add Kielbasa when burger is 2/3 done browning
4. Dip off excess grease (leave enough grease to prevent scorching)
5. Reduce heat and return onions to pot. Add box of spice (use all) If using green peppers – dice and add now
6. Continue to stir frequently to prevent scorching
7. Open all cans – remove (but reserve) excess liquid
8. Add all canned goods to pot, stirring constantly as each can is added
9. Add heaping tablespoon smoked Paprika plus 2 heaping tablespoons of Chili powder – stir well
10. When the pot boils again, reduce heat to high simmer / low boil – stir often to prevent scorching
11. Add reserved liquid as needed to maintain desired consistency
12. Allow to cook 1 to 2 hours – (lid optional based on liquid level) stir occasionally to prevent scorching
13. Taste test each time you stir – adjust smoked Paprika / Chili Powder / Crushed red pepper / Cumin to taste
14. Allow to cook 8 to 10 minutes after each seasoning adjustment – flavors develop
Serve hot, topped with shredded cheese, Jalapeno’s and sour cream as desired.
The recipe above lends itself to lots of adjustments to achieve a desired taste. At the campout, I did not use bell peppers or Cumin, and very little crushed red pepper.
